Getting hold of tasty vegetarian cooking recipes can sometimes be a challenge. So many people feel that vegetarian cooking recipes are tasteless and bland. Here I have three very tasty recipes for you that will prove otherwise. I have to admit I am not worried about the eggs in all the recipes. The latest research fails to prove that eggs increases your cholesterol levels and it is a very good source of protein, especially for vegetarians. (For people with a small budget these are very tasty as well!)
The first recipe is a tasty cheese pie. It is very important to keep in mind that the cheese really needs to be a strong flavored one or the pie will be very bland. In South Africa I will use matured cheddar cheese, but any strong flavored cheese will work.
Cheese Pie
Use bought potato chips or you can make your own potato chips.
Put a layer in a pie dish and against the sides.
Make following filling and pour into pie dish.
Ingredients For The Filling:
* 1 cup milk
* ½ tsp salt
* 2 Tsp butter
* 1 Tsp grated onion
* A pinch of pepper
* 2 Tsp flour
* 2 eggs, separately beaten
* ½ cup strong-flavored cheese
* 2 Tsp finely chopped parsley
*Cayenne pepper to sprinkle over
Method For The Filling:
1. Set the oven to 375 degrees Fahrenheit to preheat
2. Melt butter and add flour.
3. Add milk slowly, stirring constantly and allow to boil (white sauce).
4. Remove from stove and add grated cheese, salt, pepper, grated onion and parsley.
5. Blend mixture into beaten egg yolks.
6. Fold stiffly beaten egg whites into the mixture.
7. Pour into lined pie dish.
8. Bake at 375 degrees Fahrenheit for 20min till golden brown.
9. Sprinkle with cayenne pepper.
I love the next recipe; the sweet corn really makes it flavorful and tasty! It is another example of a really tasty vegetarian cooking recipe. I know that inexperienced cooks may be worried about making the white sauce (béchamel sauce) but, simply follow the instructions and you will have no problems. It is of course possible to use an instant kind, but then you have to remember to adjust the salt. I will not recommend it though. Try the sauce, it is easy and a few lumps will not really be noticed in the final product.
Sweet Corn Soufflé
Ingredients:
* 2 cups sweet corn
* 1 ¼ tsp salt
* 2 tsp flour
* 2 eggs, separately beaten
* 1 tsp butter
* A pinch of pepper
* 1 cup milk
Method:
1. Set the oven to 350 degrees Fahrenheit to preheat
2. Melt butter, add flour and stir well.
3. Add milk slowly, stirring constantly.
4. Bring to a boil and add sweet corn, beaten egg yolks and other ingredients.
5. Fold in stiffly beaten egg whites.
6. Pour into butter- greased dish and bake for 30 minutes at 350 degrees Fahrenheit.
The next vegetarian cooking recipe is for the asparagus lovers. It is really tasty and I love it. Most people will call it a "quiche" these days, but as it is a very old, well loved, recipe I keep the name "Asparagus Dish"
Asparagus Dish
Ingredients:
* 1 ¼ cups grated cheddar cheese
* 4 hard-boiled eggs
* ¼ cup butter
* ¼ cup flour
* ½ cup corn flakes
* ½ tsp salt,
* 2 cups milk
* 1 ½ pd. canned asparagus pieces
* ¼ cup asparagus water
* a pinch of pepper and cayenne pepper
Method:
1. Make a white sauce from butter, flour, milk and asparagus water. (See the method in Cheese Pie recipe, for the inexperienced cooks)
2. Arrange asparagus pieces, cheese and eggs in layers in greased dish and pour white sauces over.
3. Top with corn flakes (finely rolled and mixed with butter) and bake for 30 minutes at 350° F.
I think these three recipes is a good example of very tasty and easy vegetarian cooking recipes.
